Bikini Recipe

Yields 10 guests

To make the Clementine Cordial (produces 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Cocktail (produces 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

Method

To prepare the Cordial: Place every items into a saucepan, bring to a light boil, agitating to dissolve. After that, take off the heat allowing it to reach room temperature completely. Transfer into a sealable bottle, cap it and store chilled, where it will keep for around four weeks.

For the Cocktail Base: Mix every spirits and syrup into one big jug, let it rest for an hour, then filter it best through a fine cloth, so it's fully clarified.

To serve: Add 85ml of the premix to a mixing glass filled with ice, and stir carefully for one minute to chill. Strain into a frosted cocktail glass or a similar vessel, top with a few cranberries and finish with a quick spritz with the mandarin essence over the drink.
